Oat & Rice Blueberry Bread

Let’s talk bread! If you’re on a low carb diet and missing your bread, then you’ll be glad of this little delight. I know, I know, it looks like a real treat, but I promise you, there’s no badness, just pure deliciousness!

Here’s what you need πŸ‘‡πŸΎ

  • 100g Oat Flour
  • 68g Rice Flour
  • 224g Egg whites
  • 224g low-fat cream cheese (I used Philadelphia Light)
  • 3 tbsp Sour cream
  • 60g protein powder, any flavour of choice. (I used French Vanilla creme flavour,  the Gold Standard Optimum Nutrition whey protein is fantastic for baking)
  • 1 tsp baking powder
  • 1/2 tsp soda bicarbonate
  • 120g Fresh or frozen blueberries
  • 1/2 tsp Salted caramel flavour. Vanilla essence works fine too. (optional)

**Go ahead and double or triple the ingredients if you’d like to make more!**

How to make it πŸ‘‡πŸΎ

Preheat oven to 180c. Line a loaf pan with parchment paper (unless you’re using a glass pyrex dish or silicone pan). Mix all ingredients, minus the blueberries, in a mixing bowl until well combined. Transfer mixture to a loaf pan. Sprinkle the blueberries on top of the mixture. Bake for about 40 minutes or until well cooked through and firm, and bread is just beginning to brown. Remove from oven and allow to cool. Slice and enjoy!

Store in the refrigerator or in the freezer for freshness. If freezing, remember to slice the bread first and wrap individual slices in parchment paper.
